How can I delete the cookies and history?

i dont know how to delete cookies and clear history

For example, I want to delete all history, etc. from the beginning of time until year 2011 only? How can I do that?

Means when i surf anything on net..i dont want anybody retrieve the data or webpages or my passoword..somebody means i want to wash totally memory that nobody can find that what i surf on net...May be he installed some software on my PC to find the same...
