How do I change my last name on my emails?

I only want my first name listed in my emails and not my last name, how can I set that up as in previous emails, my last name shows up.

I cannot figure out how to change my last name so that my outgoing mails shows my new name. I have gone to mail options, profile, and changed that info, but my outgoing emails still have my old last name!
