How do I change my signature on my sent e-mails?

When I send an email to Tom Jones; In my sent file it should say, sent to Tom Jones, but it says, sent to Me. I can't ever find old emails I sent to Tom Jones anymore, HELP!

how do I change the time zone when emails are received? I"m receiving emails that does not list the actual time sent or received but some other time and I'd like to know the actual time the emails are being sent to me.

My sent emails do not say who I sent them to - only show "ME"
