How to get my address book to open an e-mail when I click on address?

I want to make a new List, and need the Contacts sorted alphabetically by Last Name. They are sorted that way in my Address Book, but when I click on Add List, the names are sorted by Email. How do I get a list in the Add List page sorted by Last Name...

When you get the error email telling you the email address couldn't be located, and right click on the address, it gives you the option of saving it to your address book but not deleting it from your address book. Why is that? Is that a hard fix?
